The Gradebook maintains a "Gradebook Name" field for each student which contains the students name as it will appear on the Gradebook->Gradebbook spreadsheet screen.
The choice of the student's "Gradebook Name" and consequential sort on the spreadsheet screen is not in the Gradebook Profile. It is, instead, maintained on the "Rosters" screen.
The Rosters screen has a "Gradebook Name" field for each student on the roster. This defaults, at the start of the school year, to "First Name Last Name". The field can be updated manually by teachers, for example if a student has a preferred nickname that is not stored in one of the official name fields, or the teacher can select their preferred format via the "Update Gradebook Name" control.
To find the Update Gradebook Name control and change the name format, go to the Roster screen either by clicking on the "Rosters" second level tab, or by clicking on the "Active Students" label on the Gradebook->Gradebook spreadsheet screen.
On the Rosters screen, find the "Gradebook Name" column. Just to right of the words "Gradebook Name" there will be a little gear icon. Click on the gear icon to bring up the "Update Gradebook Name" dialog:

The gradebook will be sorted by whatever name format is selected.
Teachers can also update the "Gradebook Name" field manually, for example if a student has a preferred name that differs from one of their official names. The Gradebook Name is ONLY used on the Gradebook's spreadsheet. It is not used outside the Gradebook nor on any official report.
The "Update Gradebook Name" control is a one-time 'change name' function: if the teacher subsequently updates a student's Gradebook Name field manually, the system will not automatically change that - though if the teacher subsequently uses the "Update Gradebook Name" control again, it will overwrite any manual changes they have done.
The spreadsheet - though not the Roster screen - always sorts by the Gradebook Name column.
